Vineyards: Grapes from our Los Olmos estate (Rioja Alta). Manual harvest in the second half of October, reaching optimal phenolic and technological maturity with double selection in the field and at the winery using a selection table (selection of clusters and grains).

Fermentation: Cold pre-fermentation maceration for 48-72 hours followed by controlled fermentation at 28°-30°C in concrete tanks for maximum extraction of aromas and color components. Two daily pump-overs for the first 8 days, then gentle pump-overs every other day. Malolactic fermentation in American oak barrels.

Aging: 28 months in new French oak Bordeaux barrels, located in the estate's cellars where temperature and humidity are naturally constant. Regular racking every 6 months.
