Wine Production:

Own vineyards. Manual harvest with double selection in the field and at the winery using a selection table (selection of clusters and grains).

Vinification: Cold pre-fermentation maceration for 48-72 hours followed by controlled fermentation at 28°C to 30°C in concrete tanks. Two daily pump-overs during the first eight days, finishing with gentle pump-overs every other day. Malolactic fermentation in barrels. Aged for 36 months in new Bordeaux barrels (90% French oak and 10% American oak) with regular racking every 6 months.
